Tasting notes

Sannen Bancha, literally "three year old bancha" is a confidential type of tea made from tea bushes that have been left to grow freely for three years before being pruned. Branches and leaves are cut into chips before being roasted over a wood fire. All stages are carried out entirely by hand.
This one has the particularity of coming from trees that have remained in the wild for more than 30 years. This gives this surprising tea extra depth! Because underneath its rustic aspects, it offers a very clean, woody and sweet infusion, with soft evocations of liquorice sticks.

Brewing tips

Tea pot : 5 gr for 500ml - 3 to 5 min

Temperature: 90 to 100° C

Sannen Bancha can withstand all temperatures; the Japanese often prepare it as a decoction by boiling for a few minutes.

Gongfucha: no need to extend the time too much, prefer short infusions of 20 to 30 sc that you can multiply.

Too subtle for my taste. I'm thinking of using it as an iced tea to be consumed continuously while working, without affecting sleep.
