Tasting notes
A Japanese black tea grown in natural agriculture* in the Uji region.
If black tea remains marginal in Japan, first flush and of the zairai botanical variety, this is becoming really rare!
And indeed, Uji Black offers a very different profile from the Japanese black teas usually found on the market.
A fluid and slightly oily liquor, with very little astringency compared to the usual Japanese black teas. Fresh and fruity mouthfeel (mirabelle plum, cherry stone) that gradually gives way to a more gourmet profile, like a good apple just out of the oven and delicately sprinkled with cinnamon.
Brewing tips
Tea pot: 3gr for 500ml, 5mn
Gongfucha: 3gr for 100ml, hot and short like a Dan Cong
To go further
While organic farming allows for the use of fertilisers and other amendments, in natural farming no fertiliser is used at all, organic or not. The tea bushes grow at their own pace and put down deep roots to draw all the nutrients they need directly from the soil.
